Grilled Romaine: Broiler Style


This past summer we visited a family friend in Traverse City, MI for the weekend and he made one of the most simple, yet delicious meals I had in my life. He cooked what is called grilled romaine and it was honestly life changing. It’s a healthy, meatless yet filling meal that you will love!


This was my yummy meal and the beginning of an obsession! 😋

This meal is super cheap to make – only 5 ingredients! I mostly eat this meal by itself or make a sweeter veggie on the side like caramelized carrots but have also thrown on toppings in the past (depending on what I’m feeling that day). Feel free to add bacon bits, feta cheese, or just about anything you can think of! I’ve even thrown leftover steak bites on top in the past and it was superb!



Ingredients:

Serves: 2 (for every person eating, you’ll need to add 1 romaine head)

  • 2 organic romaine hearts
  • Shredded mozzarella cheese
  • Montreal steak seasoning
  • Olive oil
  • Balsamic vinegar

You don’t necessarily need organic romaine, but since you’re eating majority of it, why not make sure it’s free of bad pesticides, etc? I like to spend the extra buck most weeks, but also don’t mind eating non-organic.


Directions:

  • Pre-heat oven on low broil.
  • Get out a cutting board. Cut each romaine heart in half. I also like to trim the top of each half and take off the loose/flimsy part of the lettuce. You can still cook the flimsy lettuce with the halves!
  • Get out separate bowl/cup and pour in your olive oil and balsamic vinegar (I like to add tons of balsamic for more flavor). Mix them together. If you run out, you can always make more. I don’t use measurements for this recipe!
  • Use a brush of some sort and spread the balsamic vinegar + olive oil mix a l l over the romaine halves. I drench mine – the more balsamic, the better!
  • Put the romaine halves on a sprayed cookie tray and place in the oven.
  • Broil romaine on low for 2-5 minutes. I like mine more well done before I add the seasoning and cheese.
  • Take lettuce out and season well with Montreal steak seasoning and add a ton of shredded mozzarella to taste. Place back in oven.
  • Broil on low for 2-5 minutes. If you want more of a char taste, cook longer. Keep an eye on them because you can never trust the broil too much!
  • Serve it up!

If you get the chance to make grilled romaine, let me know! It tastes a lot better on a grill, but since we aren’t allowed to use grills at our college apartment, we have to settle for the broiler which does an amazing job too and still tastes amazing.
