
I can easily say that I used to loathe kale based salads. At one point, the only way I was eating kale (or drinking in this example) was through smoothies because I could cover up the not-so-good taste. Well, over time I matured and so did my taste buds and I began loving kale, especially in salad form! Kale based salads are a lot better with yummy toppings and great for your overall health. Kale is proven to improve bone health, reducing your risk of heart disease, rich in calcium, among many other health benefits. Ingredients:
Serves: 1-2
- 2-3 Kale Leaves
- 1 Leafy Green Leaf (Optional)
- 1-2 Medium/Large Carrots (Raw)
- 2 Hard Boiled Eggs
- Bacon Bits (Optional)
- Feta Cheese Crumbles To Taste
- Blueberries
- 1 Whole Apple Sliced/Diced
- Dressing of Choice
Some of my favorite dressings to serve with this salad are any flavor vinaigrette or poppy seed. I remember having this a few times with a little ranch when I was all out of specialty dressings – no complaints! Enjoy!
