Healthy Taco Salad

Hey there, just checking in to share one of my favorite way to eat taco salad at home! You can make these work for just about any diet.

Here’s what I used:

  • sautéed bell peppers (any colors ya want)
  • sautéed onion
  • 1 can of corn
  • 1 can of black beans
  • quinoa
  • taco seasoning (reduced sodium)
  • salsa
  • chopped lettuce
  • ground turkey (use whatever meat or alternative you prefer)
  • sour cream (for topping)

I love to enjoy these tacos with restaurant style tortilla chips, or sometimes I eat it alone! This would be great with taco shells too or with lettuce wraps! Enjoy and Happy Eating! 🙂
