Hey there, just checking in to share one of my favorite way to eat taco salad at home! You can make these work for just about any diet.

Here’s what I used:
- sautéed bell peppers (any colors ya want)
- sautéed onion
- 1 can of corn
- 1 can of black beans
- quinoa
- taco seasoning (reduced sodium)
- salsa
- chopped lettuce
- ground turkey (use whatever meat or alternative you prefer)
- sour cream (for topping)
I love to enjoy these tacos with restaurant style tortilla chips, or sometimes I eat it alone! This would be great with taco shells too or with lettuce wraps! Enjoy and Happy Eating! 🙂
